Like the original, it features 100% Mosaic hops, and is dry hopped throughout fermentation across multiple additions to amplify hop flavor and create layers of tropical fruit expression from a single hop variety. At 10.5%, you know you’re into something big, but it’s quite balanced and drinkable, and the high alcohol functions to absorb as many hop oils as possible to make this one of the biggest West Coast-style Imperial IPA’s in our portfolio.
6.37% ABV, Spontaneously Fermented Beer - 3 Year Blend w/ Raspberries Timshel reflects our pursuit of flavors endemic to Monterey County & the Salinas Valley. Each winter we brew a select few batches of spontaneously fermented beer following the Méthode Traditionnelle guidelines combining malted barley, raw wheat, and aged hops to produce a rustic wort. This wort is naturally chilled overnight in our coolship and spontaneously fermented in oak barrels by native microflora. Timshel combines our favorite casks spanning the course of three different vintages, blended together, refermented on local raspberries, and naturally refermented in bottle. From us to you, we present Timshel: Raspberry.
8.420% ABV, West Coast Malt Liquor brewed in collaboration with Wondrous. A low bitterness, elevated ABV, dangerously drinkable, assertively hopped.
5% ABV, Lager - Munich Dunkel. Up until the Second World War, dark beer was the predominant beer type in the Munich area. The hard water found in the region played a special role in producing this specialty. In his book “Beer International”, the world-renowned English beer writer, Michael Jackson, accurately describes the Ayinger “Altbairisch Dunkel” as: “A good example of its kind. Impenetrably dark with a golden-brown gleam when held up to the light, and with a warm aroma and malty taste, while summoning up coffee taste sensations on going down. It is brewed from five types of malt (two of which are torrified dark), and it is only lightly hopped.” It is produced using the traditional double fermentation process.
5.3% ABV, accentuated by the floweriness of the hops aroma and has a more pronounced bitterness which quickly fades from the taste buds.
6.7% ABV, Doppelbock. A beer that has a dominant malty taste, festive foam, and truly extraordinary fragrance with an accompanying coffee tone, which becomes more dominant with the aftertaste
5% ABV, Cantillon Gueuze is the quintessential Belgian beer – a perfect blend of one, two, and three year-old lambics. Tart and slightly acidic, Cantillon Gueuze is the real champagne of beers. It is fermented only with wild airborne yeasts from the Senne Valley in Brussels and is aged in centuries-old oak casks. It also certified organic in Belgium. A true world classic that will thrill the true beer connoisseur.
5.5% ABV, Blend of lambics and sour cherries - 200 g of cherries per litre of beer. Beer with a slightly acidic taste of red fruit complemented with subtle almond flavours. Kriek brings out its maximum “fruitiness” when drunk young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.
5.5% ABV, West Coast Pilsner brew with Citra 702, a concentrated oil extracted from Citra hops by Yakima Chief in Washington. Then dry hopped Dank and Infused with more Citra, Strata and Peacharine – a new hop out of Freestyle Hops in New Zealand. We get notes of tangy tangelo, thai lime leaf and Mendocino outdoor buds.
7% ABV, Hazy Pale Ale, Hopped with 100% Nelson Sauvin hops and dry hopped at 2.5 lbs. per barrel for pleasantly diesel-like, tropical fruit and melon aromas.
5.5% ABV, West Coast Pilsner, Timbo has super rad aromas of marijuana, grapefruit, and ripe guava. Blasts of citrus pith and pine sap dominate the flavor with hints of grainy pilsner malt in the background.
