this is a semi firm cow's milk cheese. it has flavors of salted butter and sour cream. the cheese has characteristics of swiss cheese.
this cheese is a blend of goat and cow's milk cheese with a smooth semi firm texture. the cheese ages for four months offering a pleasant tanginess from the goat's milk and caramel flavors from the cow's milk.
shortly after the goat's gouda was made, it had won best in show at the 2010 american dairy association against over 150 cheese entries. this cheese offers a slightly nutty and caramel flavor, aging up to 6 months allowing a thin and natural rind to occur.
this cow's milk blue cheese is mildly approachable and rich with flavors of fresh butter and salty bacon.
