The Las Lajas farm is famous for its high quality, honey processed coffees. The "yellow honey" process used on this coffee means 100% of the mucilage of the fruit was left on the bean as it dried on raised beds in the Costa Rica sunshine. The coffee is monitored and turned hourly to create a coffee that is both sweet and clean. Las Lajas fully processes the bean at the farm level to increase the traceability and quality of the coffee. We created the sweet blue blend to be a cold brew blend, and it works wonderfully for this. The brazil coffees give a nice mellow chocolate undertone while the ethiopian heirloom varietals provide beautiful sweet notes of blueberry.
