So we had the BBQ Short Rib Tacos for a couple weeks and those were great so decided to stay on the BBQ Train and we’re bringing you BBQ Mahi Mahi Tacos. To be honest, we took some inspiration on these from an episode of Diners, Drive-Ins & Dives (S.9 Ep.4 to be exact) and then kind of made them our own. We love them and we think that you will too!

It’s kinda like a French Dip, but instead of putting this amazing beef into a bun we take the slow-roasted beef and put in a corn tortilla with Chihuahua cheese, some diced white onion and cilantro. It’s like a French Dip in that we serve with the juices that were rendered while it roasted.

We knew it might be a risk to change one of our most popular items, but after testing it we were confident that you’d be happy with the new recipe. What we did was take our Cheesesteak Chimi and make it more like, well we made it more like a Cheesesteak! We’re using thinly shaved sirloin along with Crimini Mushrooms, Poblano Peppers, Onions, a dash of Ranch Dressing and our awesome Queso.

We start this pizza with a Morita Pepper Pinto Bean Sauce topped with seasoned ground beef, Chihuahua and Cheddar Cheeses, and diced red onion - then we bake it in our 500 degree stone oven. After it bakes we top it with Diced Roma Tomato, Shaved Romaine Lettuce, Nacho Doritos, fresh Cilantro and Sour Cream.
There is only one time when pineapple should be allowed on a pizza and this is that time. Ranchero sauce, pizza cheese, Al Pastor marinated chicken or Cauliflower, onion and yes, pineapple. Garnished with cilantro, lime and chipotle aioli.
