Fatoush is derived from the Arabic fatt "crush" and a suffix of Turkic origin -ush. It refers to Pita croutons that are a prominent feature of this salad. Mixed greens and seasonal vegetables along with croutons make up a beautiful and delicious salad dressed with lemon, extra virgin olive oil, sumac and a hint of mint. Salad may vary seasonally.
