wagyu beef is "better than prime" and grown for us all around the country through kobe beef America, Redmond, OR. They start with the beef, with a rich & lightly sweet earthy-beefy flavor and a decadently buttery finish. It has intense fat and marbling, which is what makes it so special. They first USDA inspect and grade it at prime, then grade it on a 12 point kobe scale. Our wagyu rates 8, 9, or 10 (for comparison, prime rates a 4-5, and other restaurants "certified angus" rates merely a 2-3!)
