      Try our signature dish, the spicy Hinomaru Ramen (New York Style). The Hinomaru is based on the creamiest broth of the traditional styles. The tonkatsu bone broth comes from Kyushu, Japan. It is prepared by simmering pork bones for long hours to extract its marrowy and rich flavors. The broth requires 17 hours of preparation time. The Hinomaru comes with Chasu Pork, Kikurage Mushroom, Scallion, Menma, Bean Sprouts, Nori, Naruto, and a Fireball to give it a spicy kick. We recommend beers like Ginga Kogen and Ciders such as Angry Orchard because citrus or the semisweet apple flavors with a crisp finish would cut through the richness of the broth and help to reset your palate so you may re-experience the complex and interesting flavor of the broth over and again. Must be 21 to purchase.

      For the avid spicy food lover, we recommend the Kara Chanpon (ちゃんぽん). The inspiration for this specialty comes from the 'Nagasaki chanpon', a noodle dish developed in the international port city of Nagasaki. Our Kara Champion is made by flash frying--using the wok--Tiger Shrimps, Squid Legs, Mussel, Pork, Cabbage, Carrots, Bean Sprouts, Onion, and Roasted Togarashi pepper. A creamy pork broth is then added to the mix over our premium chewy curly ramen. It is then topped with shaved scallion and a naruto. We recommend the Ginga Kogen, a “Hefeweizen” style beer brewed with more than 50% of wheat malt. It is an unfiltered beer distinguished by its fruity aroma and pale color. It contributes complexity that stands up to and highlights the bold flavors of the Kara Champion. Sapporo draft is a clean and refreshing option to quell the heat and reset your palette so you can re-experience the same bold flavors all over again. Must be 21 to purchase.
