Baby Got Back Ribs
our sweet ribs are made from 100-year old family recipe originating from parsons, kansas. slow-cooked in a sweet, tomato and vinegar-based sauce that can only be described as delicious. wet nap required.
a unique and savory mixture of 21 spices toasted, ground, mixed and rubbed to lock in both flavor and moisture. this ain't no texas rub it's a complex middle eastern flavor that is not on its own too spicy, but goes great with some hot sauce.
we rub racks of ribs with spices including espresso, chili powder and turbinado sugar. slow-cook them for over four hours until the meat is falling off the bone. then we braise the rib meat in in a spicy mexican mole sauce made from four different chilies, chocolate, spices and guinness beer. served with sesame seeds and avocado.
the guys at the golden arches had a great idea, but they should have skipped the meat mold and picked up better ingredients. we use our sweet bbq rib meat on sesame seed bun with house cured pickles and sweet vidalia onions.
