For over 30 years Onetik has collected milk from Berria Cooperative farmers to make authentic and delectable cheeses using the traditional methods handed down by their ancestors. This cheese is made exclusively with milk from local (to the maker) breeds of sheep (Manech and Basco-Bearnaise). It has a succulent and complex flavor, developing notes of hazelnut and caramel as it matures. Incredibly buttery and creamy, we suggest pairing with a slice of tangy quince paste.

The “Padano” refers to the Po River Valley in northern Italy, where the cheese has been made using techniques (the double milking of the cow, cooking the milk twice, brining, and aging for up to two years) mastered throughout centuries by the Cistercian Monks of Chiaravalle. Grana Padano has a grainy texture that grates well like a Parmigiano.

This particular Pecorino, the Fulvi, is one of the few remaining pecorinos to be made in the countryside outside of Rome, the cheese’s traditional origin (hence the Romano). Tangy to the point of being pungent, sweet with a crumbly texture. Grate it on top of fresh vegetables or watch it crisp and curl in the oven.
