this is what started the business. hand rubbed with our special recipe rub, then lovingly placed in the hickory wood-fueled smokers by our pitmasters. hours and hours will pass before our brisket is smoked to perfection. cooked low & slow over indirect heat, patience and wood are the keys to great brisket (and great barbeque!) we hand trim each brisket to order. order it with "extra bark," the delicious and flavorful edge of the brisket.
coming from a local farm, our turkey breast is truly tender and memorable. first we marinate it in our secret recipe, then smoke it low and slow for hours. pulled fresh from the smoker, hand sliced and served hot.
we are proud to serve gerber amish chickens, grown locally. we smoke our bone-in chickens over hickory until we get our signature pink smoke ring (a sign of true barbeque.)then we hand pull chicken from the bone to create this sandwich. simmering the chicken in our homemade white barbeque sauce to finish it makes this the perfect pulled chicken sandwich! our white sauce spent years in the making and is a perfect blend cayenne & black pepper, horseradish, vinegar and other secret ingredients with sauteed red onion. we promise this is one sandwich you will not soon forget!

we make fresh cut fries, just like the kind you'd find at your county fair. idaho potatoes are cut fresh throughout the day, and fried. we choose idaho because they simply make the best fries. leaving the peel on for extra flavor, we finish ?em with a light salting. a true favorite!
we start by sauteing bacon & onion. then we create our own pure chicken stock, in house. add in some kentucky wonder beans and simmer for hours in the sauteed onion, bacon & chicken stock. this recipe also hales from our pit boss' wife's family in tennessee.

this recipe is the result of years & years of experimentation. our founders worked on these for 14 years perfecting the recipe. a crowning achievement on this recipe was adding our signature smoked brisket, baked right into the beans to give it a perfect sweet and smokey flavor.

we can't be a barbeque joint without great cornbread, served warm from the oven! our traditional tasting cornbread is moist and buttery, perfect paired with any of our smoked meats.
we start with a heaping scoop of brown rice and top it with a meaty and spicy gumbo filled with traditional louisiana-style cooking (onions, bell peppers, celery and garlic). warm up with our gumbo!
our signature dessert, served with housemade whipped cream. takes you home to what grandma used to make. a warm peach filling surrounded by a sweet bread crust. baked in our ovens until brown and caramelized on top. this dessert is big enough for two, but you may not want to share.
