Stout - Irish Dry 6% ABV 30 IBU Peticolas Brewing Company Dallas, TX Turn Out the Lights, an Irish Dry Stout, was brewed to commemorate our first 5 years. Although known for brewing high alcohol beers, we’re mixing it up this year with a nice 6% stout. A jet black appearance and thick head define this beer’s rich character and the use of coffee-like roasted barley heavily influences the aroma. While the flavor is initially accentuated by light caramel, it finishes with a distinctive dry-roast bitterness. Pleasant, but gentle and subtle fruit esters are overshadowed by the malt, bittering hop, and roasted barley character. You’ll actually find the body of Turn Out the Lights fairly light. Our penchant for names with multiple meanings is on display again with Turn Out the Lights – its deep black color naturally invokes ‘lights out’ imagery, we’ll literally turn out the lights on 2016 with the New Year’s Eve release of this beer, and it references the musical shenanigans heard in the brewery and highlighted during our crew’s 2015 holiday party.

Tasting notes: Our Private Reserve Tempranillo is a full-bodied red wine with soft aromas of vanilla, dried leaves, and sandalwood from oak aging. Bold dark cherry and plum flavors along with vivid acidity provide a fleshy mouthfeel and long, smooth finish. Production notes: These grapes are grown at 3,700 ft elevation in the Texas High Plains and fermented on the skin for 20 days then aged in French and American hybrid oak barrels for twelve months. This gives the wine a robust, rustic character that matches the Texas spirit. Serve at 65°F.

Over the last two decades, the wines have amused me as they have taken intriguing turns in the road. The 2019 vintage, the winery's best in recent times, is exciting and profound. TASTING NOTES: This wine shows up with the lasting power of black fruit and licorice. Its layers of persistent and formidable fruit could turn a semi-vegetarian into a carnivore. The 2015 vintage produced delicious concentrated wines in a smaller quantity than normal. This black raspberry-colored Cabernet has lovely open aromatics of black cherry, berry, and plum layered with a perfect balance of new and used French Oak. Our blend uses several blocks of Cabernet, Merlot, and Cab Franc from our Estate vineyard in Oakville. The effect is one of layered complete flavors and a delicious expression of how beautiful Oakville wine can be. Flavors match the aromas. Tannins are moderate yet add a nice chewy texture and the length goes on several seconds. This is a beautiful wine that will age surely for decades but is delish now. — Heidi Barrett
Our 2016 Alexander Valley Cabernet Sauvignon is ruby in color with a magenta rim. It has an enticing nose of cassis, blackberry, vanilla, sage and spearmint. Upon entry, this wine builds from potpourri and bramble to a bright pop of raspberry on the mid-palate. A juicy finish with chewy tannins and a medium length, it will provide drinking pleasure through 2042 with proper cellaring.
The 2017 ARTEMIS Cabernet Sauvignon offers inviting aromas of ripe raspberry, boysenberry and dark cherry along with hints of cedar and spice. The mid-palate is pleasant and round with flavors of plum, dark chocolate, dried fruit and a touch of toasted oak. The finish is rich and lingering. Blend: 95% Cabernet Sauvignon, 4% Merlot, 1% Malbec; Aging: 16 months, 43% new Oak (38% French, 5% American), balance in older French and American Oak; Alcohol: 14.5%; TA: 0.50 g/100 mL
Dark juicy fruits like currant, black cherry, and cassis give way to earthy notes of tea and spice. Well-integrated tannins give the wine a long, velvety finish. This Cabernet underwent malolactic fermentation before 13 months of aging in toasted American oak barrels.
Dark ruby red in color with satisfying aromas of boysenberry, dark cherry and mulberry along with delicate hints of baking spices, dill, cola, nutmeg and vanilla. On the palate, bold flavors of cranberry, ripe plum, cherry and super-ripe strawberry are uplifted by gentle notes of cocoa powder and sweet fig for a generous and silky mouthfeel. The Seven Falls Merlot is complex and layered, filled with bright cherry, blackberry, black currant, and herbs. This wine is juicy and full-bodied with hints of cocoa and a rich, silky mouthfeel. It has softer tannins that enhance the flavors of milder foods.
Tinto Negro, meaning black wine in Spanish, is meant to celebrate the essence of Malbec in Mendoza. Known for its dark, blackish color Malbec is definitely a Tinto Negro. Sourced from Mendoza’s high altitude valleys at 4,000 feet elevation, this Mendoza blend is meant to showcase the cool climate style of Malbec. Intense floral aromatics, dark fruit flavors, rich texture, and a bright, fresh finish cool climate Malbec. The wine is aged for 9 months in French oak.
This wine reflects the up and coming Shiraz vineyards of the Barossa, rather than the battle hardened old vines that make up the core of our other cuvee’s. But like all Torbreck wines, Woodcutter’s - Shiraz receives the very best viticultural and winemaking treatment. Flowering took place in the best possible conditions, with a historically abundant grape output.
